Go beyond the basics of cheesemaking with this intensive course which explore more complicated recipes while also touching on several delicious dairy products for you to recreate in your own home. This is an ideal gift for anyone who has experimented with cheesemaking in the past and would be keen to expand on their skill set. Of course, past experience is not a necessity and anyone with a passion for cheese would appreciate the delicious key subject of this course. Package includes 2 day hands on course, 30 page booklet full of recipes, a celebratory cheese platter with matching wines on the second afternoon and take home the products you have created.
ITINERARY: Day One:You will learn the main theories behind cheesemaking and the practical steps that are necessary in order to get the best results. You will also absorb some helpful tips and tricks on the best milks and creams to use at home, adding starters and how to easily mature the Parmesan and Raclette at home. As many of the recipes work with milk, you will be given some hints on which milk works best for each creation.Day Two:After learning the theory and steps, it’s time to get your hands dirty! On day two of this intensive course, you will put theory to practice and create the cheeses and dairy products from the above list. You will have the opportunity to make your own salt brines, ash one of the cheeses you’ve created, wax one cheese, cutting the curd, pressing the cheese and learn about the necessary sanitizing processes to keep the cheese safe.
THE CHEESEMAKER: For this course, you will be under the expert guidance of a passionate cheese maker with an extensive background in the dairy industry. The personally designed courses equip any student with all the knowledge necessary to recreate the delicious recipes in their own kitchen.
Cancellation Policy: - Written cancellations received in writing at least 30 days prior to the cheesemaking course commencing will incur a penalty by way of forfeiture of 50% of the full course cost as an administration fee. No fees will be refunded after this time. Substitutions made in writing to Cheesemaking may be made at any time prior to the cheesemaking course commencing. Cancellation of registration also includes the transferring and the postponing of the registration.
What to bring/Dress code:
An apron, a hat/bandana and enclosed, clean footwear. Please also bring a portable cooler and ice so that you can take all the delicious cheese home.
Bookings are essential
Participants will be instructed to give their certificate number and admin code in email when booking their course, where they will be allowed to choose the city to participate in. It is at this point that the certificate will be considered redeemed and the certificate holder will be bound by the vendor’s cancellation policy.
