Republica returns and is looking better than ever. Republica St. Kilda Beach is a casual beach-inspired restaurant located on the waterfront in the St Kilda Baths. This stylish restaurant boasts a beachfront setting, a bar overlooking the water, central open fireplaces and indoor-outdoor dining areas offering dazzling views of Port Phillip Bay. Upstairs is Captains Baxter with outdoor seating around a courtyard, and even more spectacular views.

Republica St Kilda Beach serves up laid back dining and drinks beachside ‘for the people’. Experience uninterrupted views whilst you dine, or simply lounge beachside and sip on a cocktail. This unique setting of beach culture invites you get the sand between your toes or soak up the vibe in the grassy courtyard. Matt started his training at the Commercial Club in Albury. After completing a year of his apprenticeship he moved to Albury's renowned gastro-pub; The Terminus Hotel where he became the Head Chef within two years. Following this, Matt developed his food and wine matching ability in the surrounding wine districts with All Saints Estate, St Leonards and Hume Weir Resort. Matt moved to Melbourne in 2004, where he did a stint at the Stokehouse St Kilda. He opened Republica (formerly Amello) with his wife, her brother and sister-in-law in late 2005. The Modern Australian menu spans from seafood and meat mains to gourmet pizzas and indulgent desserts with a strong Australian and New Zealand wine list to match.
