The modern Italian menu is the work of Gabriele Oliveri, who was raised on the Adriatic coast in Cattolica. He brings to the kitchen a wealth of international experience yet always manages to pay homage to his native hometown. A dish of spoia lorda with a white hare ragu served with squaquerone, is a twist on a regional dish he grew up with. Handmade pastas are a strong feature of the menu, with ‘strozzapreti’ and ‘nidi di rondine’ taking a front seat. Dishes are complimented by a well-rounded wine list that features some bold Italian and Australian drops.
